I would like to know whether after I complete studienkolleg at Coburg I will only be limited to Universities of applied sciences or can I apply to research universities like TUM and Ludwig
With an FSP from Studienkolleg Coburg you will only be eligible for admission to Fachhochschulen (universities of applied sciences).

I have a question regarding the language requirement. It’s mentioned on the website that you only need the “Participation in a language course certificate” is that right? I asked them on the mail as well they said the similar thing. If that’s true could you send me an example of how the so-called “Participation certification” should look like? Any help would be greatly appreciated!!!

that is correct. Studienkolleg Coburg accepts certification of course attendance:
+ Nachweis über besuchte deutsche Sprachkurse Stufe B1+/B2 “Kursteilnahmebestätigung”
The Course attendance certificate usually includes the starting and end date of your German course, the name, logo and address of the institute, The level and the total number of hours. You can send a copy of what you have per Email to Studienkolleg Coburg and ask if its sufficient. All the best
